Lemon Pound Cake

My go-to lemon loaf recipe! This delicious Glazed Lemon Pound Cake Loaf is always perfectly moist and lemony!



Ingredients:

Loaf

½ cup unsalted butter, room temperature

1 cup sugar

3 large eggs, room temperature

2 tbsp lemon zest, from 1 large lemon

1 tbsp lemon juice

2 tsp vanilla essence

1 ½ cup all-purpose flour

¼ tsp salt

¼ baking soda

¼ baking powder

1/3 cup sour cream, removed from fridge 15mins before use

1 tbsp chopped pistachio


Glaze:

½ cup icing sugar

1 tbsp lemon juice



Method:

  1. Preheat oven to 180 degree

  2. Line 8 x 4 inch Loaf Tin with baking paper

  3. In the mixing bowl, cream the butter and sugar at medium speed until light coloured and fluffy.

  4. Add eggs one at a time and beat well after each addition, scraping down the sides of the bowl.

  5. Beat in lemon zest, lemon juice and vanilla essence.

  6. In a separate bowl, whisk flour, salt, baking soda and baking powder. Add in flour mixture to the butter mixture alternately with sour cream.

  7. Pour mixture into Loaf Tin and level batter. Bake for 50 – 60mins. Allow to cool on cooling rack.

  8. Prepare the glaze by stirring together all the glaze ingredients in a small bowl, adding lemon juice bit by bit to make a pourable glaze.

  9. Pour over the cake, allowing it to drop down the sides. Add chopped pistachio and sliced lemon to garnish. Slice and enjoy.
