Luffa Gourd with Egg and Prawns

Polish off an additional plate of rice with this dish!



Ingredients:

1 Luffa Gourd, skinned and seeds removed

Prawns Medium size 4 – 6, shelled and deveined

1 Egg, beaten

Garlic 2 cloves minced

Oil 1 teaspoon

Salt and light soy sauce to taste

Sesame Oil ½ teaspoon

White Pepper to taste


Method:

1. Heat pan and sauté minced garlic with oil

2. Stir fry prawns to half-cooked and remove from pan

3. Add in luffa gourd and stir fry till soft and watery

4. Add prawns, cover pan and simmer

5. Swirl in the beaten egg slowly, bit by bit

6. Add salt, light soy sauce and pepper to taste and serve
